I just tried another fun cooking thing the other day that a friend does...sprouting beans! My friend had brought sprouted mung beans to dance class one day for her girls, and my children almost ate them all! So, my oldest told me I just had to order mung beans on the next co-op order so that we could try this fun snack.
All it takes is about 5 minutes of time total over the course of 4 days. You fill a glass canning jar 1/4 full with the beans, fill it up to the top with water, secure a piece of cheesecloth over the top and let it sit overnight. Next morning, simply dump out the water, rinse the beans with water and dump it out (the cheesecloth allows you to fill and dump water without ever taking the top off!). Then, invert the jar at an angle, so that water can continue to drain, and air can still flow through. Over the next 4 days, you simply rinse and drain the water and invert the jar 4 times a day. In 4 days, the beans will have a 2" sprout - then put in fridge and snack on them plain or put on a salad or sandwich! They really are delicious and super-healthy.
I've got some almonds going now, but their sprout isn't showing yet, and it's been 3 days. But their shoot only gets about 1/8" long. So hopefully, tomorrow will show better progress :)
